Tomato Soup

Keep the non-tomato ingredients higher to make it taste like soup and not sauce.

Ingredients

  • 1 large onion
  • 1 fennel bulb (or another onion)
  • 113 g butter
  • Pepper
  • 1 tsp celery seeds
  • 1 tsp fennel seeds
  • 30 g flour
  • 1.6 kg of tomato
  • 237 ml white wine
  • Salt
  • Water
  • Sugar
  • Tomato paste

Directions

  • Chop the onion and the fennel bulb
  • Heat the butter and add the onion and the fennel bulb
  • Add pepper and celery seeds to the mixture and cook
  • Add the flour and stir it into the mixture
  • Before they brown, add the tomatoes
  • Mash them with a potato masher
  • Add water (vegetable stock or wine)
  • Let everything boil for about 40 minutes
  • Taste, add tomato paste, salt and sugar as required
