Street Style Veg Fried Rice

Ingredients

  • 2 cups Sella basmati rice, soaked for 20 minutes
  • Water as required
  • Salt to taste
  • ½ tbsp Oil
  • 1 tbsp Oil
  • 2-4 Garlic cloves
  • ½ inch Ginger, chopped
  • 2 Green chilli, chopped
  • 2 large Carrot, peeled, chopped
  • Salt to taste
  • ½ tsp Sugar
  • 1 tbsp Dark soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp Aromat powder (optional)
  • Cooked Rice
  • ¼ inch Ginger, chopped
  • 1 Green chilli, chopped
  • 8-10 French beans, chopped
  • 2 medium size Capsicum, chopped
  • 1 ½ tsp Vinegar
  • 2 tsp Green chilli sauce (optional)
  • ½ tsp White pepper powder
  • ¼ cup Spring onion, chopped
  • 1 tbsp Coriander leaves, chopped

Directions

  • In a pot, add water for boiling, salt to taste, oil and let it boil.
  • Once the water starts boiling. Add soaked sella basmati rice and let it cook on medium heat until 70% cooked.
  • Once done, strain the rice and keep aside for further use.
  • Heat oil in a wok, once it’s hot, add garlic, ginger, green chillies and saute it well.
  • Add carrot, salt to taste, sugar, dark soy sauce, oyster sauce and cook for 2-4 minutes.
  • Caramelise the soy sauce a little; stir fry on high flame without overcooking vegetables.
  • Add the Aromat powder and mix.
  • Add cooked rice and saute it.
  • Add ginger, green chilli and toss it.
  • Stir-fry until the sauce is combined.
  • Add french beans, capsicum, vinegar, green chilli sauce, white pepper powder and mix it well.
  • Now, add spring onion, coriander leaves and toss everything well.
  • Garnish with spring onion and serve hot.
