Kaara Chutney

Ingredients

  • 125 grams chopped onion
  • 125 grams chopped tomato
  • 4 dry red chillies
  • 20 grams of split de-husked black gram (urad dal)
  • 15 grams of split de-husked brown chickpeas (chana dal)
  • 4 cloves of chopped garlic
  • 10 ml of oil
  • Salt per taste
  • 5 grams of mustard seeds
  • 10 curry leaves

Directions

  • In a pan, add about three ml of oil and heat it.
  • Add 15 grams each of urad dal and chana dal, and the chillies and fry until the urad dal become golden brown.
  • Take out the dal and the red chillies.
  • Soak the chillies in about 50 ml of water.
  • In the same pan (that should have a coat of oil) add the onions and garlic, and sauté until slightly golden.
  • Add the tomatoes and cook until they become mushy, and there is no raw smell.
  • Cool the mixture.
  • Add the onion–tomato mixture, the fried pulses and the red chillies in a blender, and blend slightly smooth.
  • Transfer the mixture to a serving bowl.
  • Add salt per taste.
  • In the pan, add the remaining oil and heat it.
  • Add the mustard seeds. Let them splutter.
  • Add the remaining urad dal and the curry leaves.
  • Fry until the urad dal becomes golden brown.
  • Add this to the chutney and mix.
